Before the pastrami's smoked it should get a spice rub. Use this easy rub for your pastrami. Notice it does NOT have salt - the brine you used has plenty of salt, so the rub doesn't need any. However, the onion, garlic, pepper, paprika and chili pepper all make their way in. This rub helps form the black crusty bark on the meat once it's smoked.
