For the BEST Italian sausage sandwiches it requires the BEST topping. Try this recipe for a topping that can be used on top of a New York Style Italian Sausage!

First off, you need to grill a good quality sweet/hot Italian sausage which you can purchase at your local butcher shop or make your own with unseasoned ground pork mixed with our Cy’s Sweet/Hot Italian Sausage seasoning. You can stuff this into a 32mm hog casing if you have the right equipment, or simply make sausage rolls by wrapping the sausage meat in aluminum foil and mold into about  5-6 inch logs. Place wrapped sausages in steamer and steam for 40 minutes. That’s it! You can unwrap and place the rolls into a hotdog or hogie bun.  Next, make the topping!

Ingredients For Topping

o    2 diced onions

o    1 green pepper diced

o    2 chopped Roma tomatoes

o    1 tsp dried basil

o    1 tsp seasoned salt

o    2 tbsp olive oil


  1. If possible, use a cast iron skillet to cook veggies. Heat skillet to medium high then add olive oil. Add onions, bell pepper and Roma tomatoes on top of each other, in that order. Sprinkle basil and season salt on top of mixture. Grill for 10 minutes undisturbed. Then mix the veggies up and cook for another 15-20 minutes until browned. Serve over italian sausage in a bun with other condiments of your choice like hot sweet mustard.
