Summer sausage is a dried or smoked sausage that can be kept without benefit of refrigeration. It is usually a mixture of pork and other meat such as beef and venison. Our seasoning mix includes spices, black pepper, coriander and garlic. Summer sausage can be either dried or smoked and is generally best kept and eaten cold, though it can be cooked. This mix will season 25 pounds of summer sausage.

Salt, Dextrose, Spices, Garlic Powder, Sodium Erythorbate
CURE INGREDIENTS:
Salt, Sodium Nitrite, #3 Red, <1% glycerin
